Asian Peanut Noodle Salad

This is by far one of my boyfriend’s favorite vegan recipe. It’s so fresh and flavourful! I absolutely love it as well. It will impress more than one of your friends and still, it’s so easy to make.

Ingredients

  • lettuce

  • cabbage

  • zucchini or cucumber

  • 1 block of firm tofu

  • rice vermicelli

  • sesame seeds

Tofu marinade

  • 2 tbsp soy sauce

  • 1 tbsp sesame oil

  • 1 clove of garlic

  • smoked paprika

Peanut Sauce

  • 1 tbsp peanut butter

  • 1 tbsp soy sauce

  • 1 tbsp sesame oil

  • 1 clove of garlic

  • 1 thumb of grated fresh ginger

  • lemon juice

  • salt & pepper

  • water

Instructions

Mix all the marinade ingredients in a bowl. Add the cubed tofu and put aside in the fridge while you prep the rest. To make the peanut sauce, simply add the ingredients besides the water. Mix it all, add the water until you get the perfectly smooth texture.

Put the dried noodles into a bowl and pour boiling water on top. Wait 2 minutes until the soften. Drain and rince them with cold water.

Fry your marinated tofu in a pan for 3-5 minutes. Chop all your veggies and add them to a bowl along with the noodles, the tofu, the peanut sauce and some sesame seeds. Serve with lime and chili (optional).
