Vegan Recipes Your Non-Vegans Friends Will Love

Beyond Burgers

What you will need:

  • vegan Beyond Meat burgers (Impossible and WOW burgers work too)

  • vegan cheese slices (I used Wilmersburger)

  • seeded buns

  • hummus

  • tomatoes

  • cucumber

  • lettuce

  • 1 onion

  • 1 tsp date syrup

  • 1 tbsp soy sauce

To make the caramelised onions, chop the onion and fry it in a pan for 2 min. Then reduce the heat to medium low and add the soy sauce and date syrup. Stir until golden brown.

Cook the burgers on one side, then flip them over and add the slice of cheese on top of the cooked side to allow it to soften and slightly melt.

Assemble the burgers by spreading hummus, cucumber slices, lettuce, the burger and cheese, the caramelised onions, tomato slices and another spread of hummus on the other half of the bun.



Coconut Red Jackfruit Curry

What you will need:

  • 4-5 gloves of garlic

  • 1 onion

  • 1 thumb of ginger

  • 1-2 tbsp red curry paste

  • 4 kefir lime leaves

  • veggies (I used zucchini, carrot and bell pepper)

  • 1 can of jackfruit

  • 1 can of coconut milk

Chop the garlic, onion and ginger finely and put it in a pot with a bit of oil. Then add the curry paste and a little water to dissolve. Add the kefir lime leaves and chopped veggies. Then add the coconut milk and drained jackfruit and bring it all to a boil. Then reduce to low heat and let it simmer until the vegetables are cooked.

Serve with jasmin rice, green onions, cashews and fresh chili.
